Tasting Note:October 3, 2019

Even better than when we tasted in barrel two years ago. Dark purplish ruby red. Thick and layered nose coated with mocha, blackberries, dark flowers and a bit of gravel. Medium plus tannins (7.5/10) and full bodied. Almost silky on the palate rich in spices, especially cinnamon and black currants. Long and lingering finish. Cannot wait to see this in a few years.

The 2015 Elysium is a brand new bottling from Holden Manz. This maiden vintage is made up of 50% Merlot and 50% Syrah, of which 80% is co-fermented and the remaining 20% Syrah is added at the end. Aged for 24 months in 100% new French oak. Only 800 bottles produced.

Tasting Note:December 21, 2017

Deep purplish ruby red. Dark and rich nose coated in caramel, dark fruits and perfumed flowers. Heavy oaky tannins (8/10) with a full body. Dark and heavy palate with dark berries, sweet spices and a touch of gravel. Long and lingering finish. Could easily see this drinking for 15+ years.

Barrel Tasting with Gerard Holden and Thierry Haberer. We got a sneak preview of a bottling that has not yet been released or even named. A little bit of an experiment. Made up of 50% Merlot and 50% Syrah, of which 80% is co-fermented and the remaining 20% Syrah is added at the end. Aged in 100% new French oak, been in barrel for around 2 years now, not sure how much longer it will be fermented for.
