2014 Tommasi Ripasso Valpolicella Classico Superiore DOC

Fourth wine for our wine pairing at Chef's Table this evening, paired with braised short rib ravioli.
Medium ruby red core with garnet edges. Layered nose with notes of lavender, black cherries, herbs and sweet oak. Medium tannins (5.5/10) with a delicate palate. Notes of roses, earth and black cherries. Medium bodied with a dry medium plus finish.
The Tommasi Ripasso is made through refermenting their Valpolicella Classico bottling on the warm grape skins from their Amarone bottling given this wine richer characteristics than usual. Only made in rare vintage years. Made of 70% Corvina Veronese, 25% Rondinella and 5% Corvinone. Additionally this is aged for 15 months in Slavonian Oak barrels.
