2014 Silverthorn Méthode Cap Classique The Green Man
Region: Robertson, Breede River Valley, Western Cape, South Africa
Medium golden yellow with tight little bubbles. Fresh nose with crisp green apples, brioche and some crushed gravel. Well balanced with medium acidity (5.5/10) and medium bodied. Mousse mouthfeel with notes of apples, lemon creme and a touch of yeast. Long finish with some minerality.
This bottling is John Loubser's take on the traditional 'Blanc de Blancs' and made up of 100% Chardonnay from Robertson within the Breede River Valley. The Chardonnay is fermented in a mix of old French oak barrels and stainless steel. This wine goes through secondary fermentation within the bottle and spends a minimum of 24 months on the lees before bottling. Only 11,400 bottles produced.
