1999 Grant Burge Shadrach Cabernet Sauvignon

Deep to medium garnet red with brick edges. Dark attack on the nose with leather, bark, spices, a touch burnt and dates. As it aired out it gained some additional complexities with forest floor and more pepper. Solid acidity and well balanced with medium tannins (6/10). Quite a bit of red cherries on the palate with some earthy notes and a touch of cinnamon. A touch tart in the rear of the palate with some light tomato notes, mushrooms and gravel. Medium bodied with a long finish.
We thought this was most likely a Cabernet Sauvignon or Cabernet Sauvignon led blend with some Shiraz from Australia. Additionally it has to be between 15 and 20 years old (so between a 2002 and 1997). Not bad for the first wine.
The Shadrach is traditionally made of 100% Cabernet Sauvignon from fruit from Barossa and Coonawarra. For the 1999 vintage the fruit is broken down by 67% Coonawarra, 25% Barossa Valley and 8% Adelaide Hills. This is aged for 18 to 20 months in new and neutral French oak barrels. Additionally, this spent another 30 months in the bottle prior to release.
