2012 Two Shepherds Pastoral Rouge
A mix of garnet and crimson red with moderate intensity. Day one started with some floral and provenance herbs. Also a touch of wild berries and undertones of chalk and wax. Day two opened up with some red cherry cola and white pepper. Aromatics of lavender, red berries, and some sour cherries in the moderate length finish. Moderate tannins (5/10) and moderate body.
This bottling is the flagship blend from William Allen at Two Shepherds Wine. A blend of 45% Grenache, 30% Mourvedre, and 25% Syrah. 50% whole cluster pressed, fermented in native yeast in open top bins for ten days prior to being pressed and aged in neutral French oak barrels for ten months. Five of which were on the lees. Only 225 cases produced and 12.5% alcohol.
