Tasting Note:June 27, 2016

First of the reds from Saddleback Cellars. Deep and dark ruby red with garnet edges. Lots of layers on the nose. Starting off with damp earthy notes and leaves. Followed up with some mushrooms and truffles. Slight smokey undertones as well as some plums. Moderate tannins (7/10) and full bodied. Definitely seemed older than it is. Some greenery and bell peppers on the palate with some dark fruits and slightly savory undertones too. Long and lingering finish. So complex and layered from the nose all the way through the palate. Rustic in style and not overly fruity but definitely in the undertones.


Made of 91% Cabernet Sauvignon and 9% Petit Verdot. The Cabernet Sauvignon comes from two different vineyards; 85% from the Saddleback Cellars Estate Vineyard in Oakville and the rest is from Atlas Peak. The Petit Verdot comes from the Truchard Vineyard in the Los Carneros AVA of Napa Valley. All the fruit was gently crushed into small stainless fermenters before fermenting on the skins for fourteen days. After a combination of punchdowns and pump-overs the wine was racked for 30 months in 60% new French oak and 10% new American oak barrels. Polish filtered prior to bottling. Only 122 cases produced and 14.2% alcohol.
