2004 Caymus Cabernet Sauvignon Special Selection

Estate: Caymus Vineyards

Region: Napa Valley, California, United States of America

Tasting Note:July 7, 2017

Fun blind tasting of Napa Valley Cabernets, we decided to choose two from 2011 while my Dad selected two different vintages of Caymus Special Selection.

Deep ruby core with garnet edges. A touch stinky ok the nose straight from the bottle, light dark fruits, and sweet spices. Heavy tannins (7/10) and medium plus to full bodied. Dark palate with dark cocoa, dark fruits, plums, cassis, gunpowder and vanilla. Long finish.

Made of 100% Cabrenet Sauvignon and then aged for around 30 months in around 90% new French oak.

Garnet red with bricking on the edges. Very complex nose that started off savory and a little dirty with some meaty notes. Finally opened up with some perfume and anise. Oh and you cannot forget the subtle undertones of cassis and blackberries through out the nose. Moderate tannins (7/10) with a moderate plus body. Insanely sweet with a ton of cassis and literally like sugar on the palate. Still a little harsh due to some heat. Solid acidity in the finish. Very long finish, lingers for at least 30 seconds. Definitely had a few savory notes and quite a bit of baking spices.
